Last meal of the day, a balanced meal that must provide the body with good nutrients. It should not be too large, because at night we don’t spend a lot of energy.

At the beginning of this summer, I chose a cold, fresh and colourful meal.

Mixed salad composed of lettuce, cucumbers, peppers, tomatoes, fennel and onions, accompanied by trout fillet and potato in field dressing.
Vinaigrette (olive oil, aceto balsamico, mustard, choice of aromatic herbs).

Lettuce is light and refreshing, full of minerals and a wide variety of vitamins. Very low in calories, it has a strong satiating power due to its fiber content. It promotes digestion and transit. Great help in water retention problems and kidney stones.

The cucumber is an excellent source of water, a very low caloric intake. As with lettuce, it contains a large number of minerals and vitamins from groups A, B, C and E.

With its antioxidants, the pepper fights against free radicals and limits cardiovascular diseases and the build-up of bad cholesterol in the arteries.
I opted for a red one because its vitamin C content covers 100% of our daily needs. It is perfect to avoid fatigue. And then the yellow one, which contains vitamin B6, which is involved in the nervous system.

Colourful, sweet and tart at the same time, the tomato helps our skin to protect itself from the sun’s rays, it is rich in fibre. An important source of minerals, it acts on the proper functioning of the kidneys.
It is particularly rich in lycopene, which attacks free radicals, responsible for ageing and certain diseases such as cancer.

A touch of fennel for its fresh and aniseedy taste! It is also loaded with antioxidant substances. Rich in sodium and vitamin E.

A small amount of onion to finish off this pretty salad. It has a high Quercetin content, which promotes blood circulation. Contains silica which helps to prevent thrombosis and ageing of veins and arteries. It has anti-anemic properties and regenerates red blood cells.

Trout fillet is a fatty fish, an excellent source of omega 3 fatty acids, known to limit the occurrence of certain cancers and cardiovascular diseases. Good source of phosphorus, selenium and B vitamins.

The potato is a perfect accompaniment to a mixed salad, especially at dinnertime, as it facilitates sleep. It is rich in vitamin B6 (cell renewal) and keeps the nervous system healthy and balanced. The high amounts of copper and iron it contains stimulate brain activity. Rich in potassium and low in sodium, it lowers blood pressure.

It is important that this meal be eaten early, so that the body has time to digest it and therefore avoid going to bed with a heavy stomach. This will allow you to sleep better!

A little preparation time certainly! but a mixture of flavours not to be missed.
